For the crust:
• 240 g flour (1.7 cups)
• 30 g sugar (2 tbsp)
• 5 g vanilla sugar (1 tsp)
• 5 g baking powder (1 tsp)
• pinch of salt
• 80 g butter (5.6 tbsp)
• 1 egg
For the cheesecake filling:
• 600 g cottage cheese / farmer’s cheese (21 oz)
• 2 eggs
• 80 g sugar (4 tbsp)
• 3 tbsp sour cream
• 2 tbsp cornstarch
For the topping:
• 150 g raspberry jam (5.3 oz)
• leftover dough crumbs
🍰 STEP-BY-STEP RECIPE (EN)
In a bowl, combine flour, sugar, vanilla sugar, baking powder, and a pinch of salt.
Add butter and egg, mix, then rub into a soft crumbly dough.
Press the dough into a baking dish, leaving some for the crumble.
For the filling, blend cottage cheese, eggs, sugar, sour cream, and cornstarch until smooth.
Spread the creamy filling over the crust.
Top with raspberry jam and gently even it out.
Sprinkle the remaining dough crumbs over the top.
Bake for 40 minutes at 180–190°C (355–375°F).
