Impossible Pumpkin Pie is amazing. This is the easiest pie I have ever made. It takes less than 5 minutes to prepare. The hardest part is waiting for it to cool so you can eat it.
It actually forms its own crust as it cools. You can use any flour to thicken the pie, so it is very easy to make a gluten free variety. Because it doesn’t have a traditional piecrust, it is much better for diabetics and dieters with calorie, fat and carbohydrate restrictions.
This is truly a pie you can enjoy without feeling guilty about eating. It is an absolutely delicious pie with several variation possibilities.

INGREDIENTS:
2 large eggs
3/4 cup sugar (brown, white or sugar substate}
1/2 tsp. salt
1 tsp baking powder
1/2 cup all-purpose or gluten free flour
1 1/2 cups milk (whole, evaporated or plant)
4 tablespoons melted butter – room temp
2 tsp. pure vanilla extract
1 to 1 1/2 cups pumpkin
2 + tsp pumpkin pie spice
Butter to coat baking dish

I made this for Thanksgiving using almond flour and a suger free brown sugar substitute. So good! Also so true that it's best cold. Interesting that I didn't care for it when it was slightly warm. Different approach?
This isn't pumpkin pie. It's pumpkin custard. Mom made this 100 years ago. I remember her making this inthe 50's. Brown sugar makes it really good.
I love this! As I’ve become less mobile I do still try to make some special dishes (or weekly bread) so I’m also contributing and sharing delicious recipes. I’ve never had a crustless pumpkin pie but this looks fabulous and my favourite part is all the scrumptious mix inside the crust-this definitely looks like a winning desert for the upcoming Christmas holidays! I did this recipe last night. I substituted pumpkin though by using our sweet potato left overs . I had oven roasted them cut in wedges with brown sugar , butter with pecans and the skins left on. It’s delicious! Not too sweet at all . Thank you . Love the no crust . Happy Thanksgiving.
