I swear it was the dishie (me)

It'll probably buff out, but holy hell i nearly cried. My best friend gifted me this beauty for my 30th, i can never tell him. Ever. Am i overreacting?

    Not the kurosaki 😭 it’s not terrible but you’re going to have to grind out the edge until it is reset, then put on a whole new edge. A competent professional sharpener should be able to take care of it. Curious to know what the steel is?

    Knives are tools. Some are beautiful and lovely tools, but they’re still ultimately tools, and they exist to be used. They’re gonna get dinged and nicked and repaired.

    Ships are safest in harbor, but that ain’t what ships are for. Don’t beat yourself up too much

    That’s no knick, it’s a nap. These happen when you hit the hard brittle edge from the side.

    You don’t need air, you need a sharpening stone. Just sharpen that out.

    i got one of my favorite MAC knives at a flea market for 2 bucks (actually have gotten about 3 of them there for 2 bucks). It had tons of chips and was actually missing a quarter inch of material at the tip. I spent about an hour with my stones and the blade looks new

    We bought our mom a beautiful trident chef’s knife and then our dad proceeded to use it as a cleaver on a ham bone and chipped it. It’s almost been sharpened out but we never let him off the hook for it.

    Not overreacting that’s pretty heartbreaking. It’ll grind out but you see how much steel you’re going to lose.

    Anybody who steps into Japanese knives should be prepared to learn how to sharpen; it’s part of the maintenance and technique imho. Some micro chipping sometimes is a total non issue once you’ve accepted this.

    It’s like when you buy a new car and it gets its first door ding. Now you can enjoy it without worrying.

  14. Not too difficult to fix that with a good stone, if you aren’t comfortable a pro sharpener will fix that up very quickly, can be like it never happened.

  16. It’s not too bad and definitely fixable. You can opt to send the knife in to grind down the profile and re-edge. try asking around in the /sharpening or /Truechefknives subs.

    No tool you use for work will ever be safe from damage, if you don’t want it to take the beating, keep it in your home kitchen.

    My kids put my Shun santoku in the sink and the tip caught the drain and broke off. I couldve cried but at the end of the day, its just a knife and was bound to get some wear and tear from usage. Ive heard I can send it to Shun and theyll put a tip back on it but havent bothered yet.

    Don’t waste too much energy feeling sad. Just keep using it. after about a year of use and occasional sharpenings the nick I put in my first japanese knife is smoothed off.

    I didn’t see it the first time, now I feel sadness. Also, up close it looks like a lil soft-spoken shark.

    The steel that you can home on that knife is all in yhr center. If you keep taking care of it and sharpening/reshaping it as needed it will last generations and eventually become a pairing knife. Just start your sharpening journey, find a wet wheel like a tormec to get past the chip then use wet stones. It will not be good at first find someone who knows how to do it to show you the process ad it will take lots of practice to get the muscle memory down

    Dishie doesn’t clean the knives. You clean your own knife so 1. Dishie doesn’t cut himself. And 2. So this doesn’t happen by being banged around against other dishes.

  23. Knives are tools. Sometimes they take some damage. That’s easily fixable. Like 5-10min on a stone and it’s back to normal. Don’t sweat.
