    I did what could be called “The Four Pastas of Rome” tour of Rome, repeatedly getting amatriciana, cacio e pepe, carbonara, and alla gricia. The two things I’d say about amatriciana are (1) pepper flakes are mandatory, (2) *lots* of *chunky* tomatoes are mandatory. OK, three things – no onions in amatriciana, I didn’t see a single onion in any rendition. So anyone thinking of onions? No. 🙂
