Via Cassia Named Best New Restaurant Nation For 2026

USA Today has kicked off the new year by revealing the 10 Best New Restaurants in the United States for 2026. This USA Today poll determined the top 10 new eateries nationwide based on votes from its readers, and the new Hudson Italian dining hotspot Via Cassia, landed at #4 on the list!

Via Cassia opened in 2024 and is a self-described “neighborhood Trattoria” according to its website. Offering a “simple…neutral…rustic” menu that is “pasta heavy,” with only 15 tables, this restaurant delivers a small, quaint, and “ambient” atmosphere. Not to mention a stellar wine list!

Here is what USA Today had to say about this stellar restaurant:

…as the former chef de cuisine at Babbo in New York, chef Gaetano brings his deep knowledge of Northern Italian cuisine to the pasta-heavy menu, all of which is made in house. There is an extensive Italian wine list as well as antipasti, formaggi, and salumi options. The rustic interiors feel like a modern take on an Italian farmhouse, and the warm hospitality highlights the neighborhood trattoria feel.

This is not the first time a Hudson eatery has received national acclaim. Back in 2022, Cafe Mutton was named one of the 50 best restaurants in the US by the New York Times!
