1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger; cook 2–3 min until soft. 2. Add sweet potato, cumin, and chilli flakes. Cook 5 min, stirring. 3. Stir in tomato paste and peanut butter. Gradually add stock, mixing until smooth. 4. Bring to a boil, then simmer 15–20 min until sweet potato is very tender. 5. Add greens and cook until wilted (spinach 2–3 min; others slightly longer). 6. Mash some sweet potato to thicken if desired. Season to taste. 7. Serve over grains and top as you like.
I eat this every week. In my opinion the denser version with less tomato and water and more peanut is better but make sure you use unsweetened thick peanut paste, not American peanut butter. You can cook any vegetable you like that’s in season in the sauce. I like to roast some yams and chickpeas on the side
