Go to H-mart’s pre-made food section and buy some. I love Korean food, but making all that banchan can be a lot of work. There’s no shame in just buying it.

The sauce is so easy; soy sauce and sugar with a dash of sesame oil, sesame seeds and black pepper. Don’t add anything nonstandard like gochujang. It doesn’t taste good in japchae.
You boil noodles, stir fry your veg and meat then mix everything together after it stops sizzling and is cooling off the stove. This prevents the noodles from overcooking and getting soggy.
Make sure you squeeze out your blanched greens (usually spinach) and mushrooms before you fry them to get out any excess water.
It’s more like a warm noodle salad than a full on stir fried noodle dish.

It may seem like a lot of steps, but I believe that cooking and seasoning everything separately is really key. It goes fast once you are prepped.
I like the recipe on Korean bapsang. https://www.koreanbapsang.com/japchae-korean-stir-fried-starch/. Don’t be discouraged by the length of the recipe. Just follow it. That being said, I never use meat in mine, which does cut down on time.
