Smoked a meatloaf the other day, which was delicious. Lots of leftovers because I made a 4 pound meatloaf . . . because I wanted lots of leftovers.
Toasted sourdough, red onions, meatloaf, tomatoes, microgreens, Duke’s mayonnaise, and black pepper.
This one was cold, but tomorrow I plan to make a hot sandwich where I fry the meatloaf slices and melt some sharp cheddar on them. Maybe some caramelized onions? Cold meatloaf sandwiches and hot meatloaf sandwiches are almost entirely different concepts, and deserve different toppings.

I loooove meatloaf sammiches. I would eat half of this and use the other half for a pillow lol.

Today, Just pre-made a 3lbs beef/pork/lamb meatloaf for 1 of the meals for this weekend’s camping trip. Definitely planned to have leftovers for a sandwich!
