Lemon Herb Chicken with Roasted Veg – Recipe by What Shall I Cook

Ingredients:
• Chicken breasts or thighs – 4 pieces
• Olive oil – 3 tbsp
• Fresh lemon juice – 2 tbsp
• Garlic cloves – 3, minced
• Fresh herbs – 2 tbsp chopped (parsley, thyme, rosemary, or oregano)
• Salt & black pepper – to taste
• Mixed vegetables – about 4 cups (carrots, zucchini, bell peppers, broccoli, or potatoes)
• Lemon slices – for garnish
👩‍🍳 Instructions
Preheat oven to 400°F (200°C).
Prepare marinade: Mix olive oil, lemon juice, garlic, herbs, salt, and pepper in a bowl.
Season chicken: Coat chicken pieces with half the marinade.
Prep veggies: Toss vegetables with the remaining marinade.
Arrange on baking sheet: Place chicken and vegetables in a single layer. Add lemon slices on top.
Roast: Bake for 25–30 minutes, until chicken is cooked through and vegetables are tender.
Serve hot: Garnish with extra herbs and a squeeze of lemon.
