




As we were wrapping up our visit to our homeland, Argentina, we stayed at a small hotel where the owners let us use their grill. Cast iron, V-shaped grates, almost five feet long, a true beauty, even if a bit rusty (you can see the grates pooling the juices in picture number 3).
On day one, we grilled chorizo sausages for choripán. On day two, we cooked a tenderloin and ate it straight off the carving board (there's a knife in picture number 4, but, truly, you could cut it with a fork).

That looks amazing.
I’m always impressed by how people control the temp on those Argentine setups without a crank. I’m a Santa Maria style guy myself, so I usually just rely on the lift system to handle the heat 😉
