Wanted to share an update on the birthday cake I made! A month or so ago I posted this Italian Rainbow Cookie inspired cake I made a few years ago for my husband and asked for advice on how to make it better. Well, this past weekend I spent all day making this upgraded version! A few things I did differently:

  1. I bought the Wilton baking strips but they didn’t really seem to work and my layers all kind of baked unevenly (one side higher than the other). Maybe due to the pans I have? Anyway, I took Reddit’s advice and actually attempted to level them and I even trimmed around the edges! First time doing this and it made a huge difference.

  2. I also bought better spatulas for frosting and cooling racks, wrapped my layers and refrigerated before assembling. I think this helped a ton!

  3. My ganache was way more finicky this time but I found an old post on here and was able to save it. It’s not as glossy as the one I made before but it tasted amazing. Also, thanks to the tips from my last post I whipped some of the ganache and used it as a crumb coat around the sides.

I’m so happy with how this cake turned out! Husband and his entire family loved it, and went back for seconds (and thirds). Thanks for all the help Baking Reddit!

  2. Forgot to mention, I think the problem with the ganache was the type of chocolate I used. It was Lily’s and I definitely didn’t heat the cream high enough before I added. Oh well! Tasted great!

    Did you use your regular rainbow cookie sponge recipe and just bake in the round pan? Note I’m not asking for an actual recipe (I see your flair and am a mod of this sub) just asking for your technique.

    What a great idea! We got some Italian rainbow cookies in a cookie box at Christmas and they were so good that I remember thinking, “Gosh, I wish these were bigger!” AND NOW YOU’VE GONE AND MADE IT A CAKE. So beautiful, and perfectly executed!

    Omg YUM!! Looks good. I recently posted asking for the recipe for the cookies. But then I decided I didn’t want to do all that work. Making it into a big cake would be more my speed.

    Level your stove. It has twisty feet for this purpose.
