i appreciate the meal, but its so unfortunate that the pasta is extremely overcooked. Every Noodle is just full of water and extremely mushy. I tried to tell him but he won't change it, says its a family recipe.. 😮‍💨

    Pull some out for yourself and set it aside.

    Leaving the pasta in the water with the heat off while finishing the sauce is fine (preferable to draining it and leaving it to coagulate in fact), so maybe he just needs to learn the apropriate timings.

    EG [this lovely recipe from Gennaro Cantaldo](https://www.youtube.com/watch?v=SwDJi_PB-wY) where the pasta is added direct from its pot to the sauce. ‘Now we add the pasta, which is ready.’

    The only reason he does that is probably cause his mom did that. And so he just assumes it’s normal. Why he says family recipe.
    Have you taken him out to eat pasta in a restaurant?

    My wife doesn’t wait for the water to boil before putting in pasta. She fills the pot, puts it on the stove, and puts in the pasta. Then she just tests it until it’s cooked. She doesn’t do much cooking anyway, but she’s not allowed anywhere near my fresh pasta under threat of divorce.

    My husband does this and doesnt salt the water enough so his pasta is always overcooked and bland.

    I save the poor innocent noodles when I can. They’ve dont nothing wrong to suffer this maltreatment.

    Grew up with a mom who boiled yep, BOILED vegetables. No wonder I grew up hating vegetables. Learned to cook for myself later after moving out and absolutely love vegetables now. I look forward for you to be able to make your own pasta. You know, the correct way lol
