All done in the oven on one sheet pan. Broccoli, zucchini, cherry tomatoes on the vine. Served with whole wheat couscous with sun-dried tomatoes and basil. Lots of garlic in everything. It was fabulous and only took about 20 minutes!

I'm trying the Mediterranean diet to reduce my cholesterol and hopefully lose some weight. You've all been so inspirational with your meals. Hopefully this is the start of something great.

    Had almost the exact same meal this week! (HEB’s meal deal was buy salmon, get broccoli, couscous, and avocado oil free haha!) so good and filling. Always a crowd pleaser at our house! We love salmon with Spicewalla’s honey herb rub!
