

First attempt ever at making ramen! Clear soup is a combination of chicken bone/shiitake/kombu/niboshi and the resulting broth from simmering chashu (water with garlic, ginger, onion, whole black peppercorns). First photo is seasoned with a shoyu dare made from the sauce I simmered the chashu in, and the second photo is seasoned with shio dare. I used a couple kinds of aromatic oils; scallion oil and sesame oil on the shoyu ramen, matsutake oil and sesame oil for the shio ramen. I put the bamboo shoots on the side for the shio ramen, as the oil from it stained the soup red, and I wanted to preserve the natural color of the soup. Hakkeyoi!!!

Looks good but since I can’t taste I’m only giving you a 7/10 for presentation. Sorry, I’m a chef and a ramen enthusiast so I’m picky.
I would like to see the egg halved, a few less scallions, and I want to see more noodles. Also your bowl is too small I think for the amount of pork.
I’m sure if I could taste it I would give you more points! Hope you enjoyed it.
If you can get a bigger bowl and work on the presentation. Halve the egg, show us the fish cakes, less spring onions. Otherwise looks great!
