Couldn’t figure out how to change the order but my top 5 were:
1. Miso ramen in Sapporo
2. Lekei ramen in Tokyo
3. Jiro ramen in Sapporo
4. Ichiran in Hiroshima
5. shoyu ramen in Ginza

I found that I generally don’t love fishy broths but do love broths with strong miso or shoyu flavors. I enjoyed some of the tsukemen I had but I can’t get behind cold noodles, I will try hot noodles and hot broth. When I make it.

I also was surprised by ichiran despite having had it in New York! I loved the subtle flavor and the lack of bad pork smell which im intimidated but excited to try to emulate.

I did not care for the clam or lobster ramen and hated the beef ramen.
