Hi everyone! I’ve been lurking in this sub for a bit now and all of the French onion posts have made me want to try making it for myself. It’s supposed to get pretty cold here tomorrow and this has always been one of my favorites at restaurants in the wintertime. I took 3 sweet onions and 1 red onion I had leftover and sliced them as thin as I could to caramelize for about an hour. I couldn’t find sherry so I used some white wine to deglaze them and put it all into the crockpot with beef broth for about 6 hours. The house was smelling so good it was getting hard to wait at the end lol. I also couldn’t find Gruyère cheese so I settled with mozzarella and it still turned out better than any restaurant french onion I’ve had! The onions are really sweet and melt in your mouth. I’m definitely gonna start making this for myself now that I know how easy it is. I made some tomato bruschetta to go on the side with it.

If I’m going to caramelize onions I’m doing 3 pounds. I decided that last time. I go pretty dark and takes almost an hour.
