




Hi tomato lovers, I would like to share something I figured out last year..
For background my husband and I grow most of our vegetables each summer and it’s only the 2 of us & I couldn’t figure out what to do with all the excess tomatoes and how I grew up is WE DONT WASTE FOOD …
I thought I’d share my tomato paste recipe in case there is another human who love their own grown veggies outside of season.
Step 1, get an oven pan, chop your tomatoes into big and chunky pieces, I like to add onion, bell peppers and chilli’s or jalapeños, whatever I have in the garden that’s fresh.
Season with salt, pepper and herbs.
Step 2, low heat pop it in the oven for about 2hours, I put my oven on around 80’C.
Ideally ypu want the tomato skins to peel off by themselves.
Step 3, toss it all in a bowl and hand blend, no added liquids as you want it a paste consistency.
Step 4, put it in ice cube trays and freeze
The next day, you can pop them out and place them in a freezer bag.
They can be used for mince, chicken, stir fry, pizza base and whatever else your heart desires.
As it is a concentrate of all that tomato goodness fresh from your garden.
And this way you can have them all year round!

I’m in the same situation my wife and I. On a good year we get 200 lbs of tomatoes and can whole tomatoes, marinara sauce, diced tomatoes, and salsa. Adding some paste to the mix makes sense. Thank you for the suggestion.
