  4. Well…… I toasted my pecans for the amount of time given here. They came out burnt. Didn't use pecans, so to make up for missing pecans I added an extra sheet of graham crackers, still came up short in the filling – crumb ratio by quite a bit. Mine baked up big and puffy and then fell. It's been awhile since I've made cheese cake. Think I'll stick to my mom's recipe, it's the best cheese cake I've ever had.

  7. Back in the 50's we couldn't afford fancy equipment. We "crushed" our nuts and crackers using either a food mallet or in a pinch a bag covered hammer. Put your food in a bag, leave a spot open for air to escape, and gently break it up. Or go to town if you want dust.
