I did 100g of starter, 350g of filtered water, 500 g of flour with 10g of salt.

Then I bulk fermented overnight on the counter for about 8 hours, shaped then put in the fridge for about 3 hours. preheated oven and dutch oven to 450 for 30 minutes, then lid off for 15 minutes.

This is way better than what I expected my first loaf to be! But it came out moist in the middle. Any advice on why would be greatly appreciated!!

    You’re full of shit. No one making their first loaf is making the lamè cuts and sprinkling the flour like that. 

    It’s a good loaf though. No need to fish for Internet points by claiming it’s your first.

    I’m new to baking sourdough (from cultivating the starter from scratch starting from 12.23.2025) I’m on my 5th loaf now & my 5th is just close to what you have on your 1st! Congrats!!

    I’ve been digging sourdough stuff on YouTube & reddit quite a bit these days, and found out that experienced bakers could be kinda pissed with newbies showing off their perfect first loafs! So if you get a bit harsh (or bitter) comments, just take them as compliments becuz not everyone’s first loaf looks like yours! Just don’t take it personally.
