My first attempt at tonkotsu turned out way better than I could have ever hoped for!

    The soup was made with nothing but bone in pork neck, as that was the only thing available. Soaked them for about 3-4 hours, rinsed several times before putting on the stove. Once no more brown scum rose to the surface I poured the water out and rinsed thoroughly again. Back on the stove and brought to a boil once more, one large carrot and one onion added. Apparently those should have gone in at the very end but it worked out anyway. Total boil time about 19h. Immersion blended at the end to emulsify that last stubborn bit.

    Tare was mostly powder dashi and salt, a dash of regular Kikkoman soy sauce. Chashu from JustOneCookbook, eggs just basic but added some garlic and ginger. Finally I fried some sliced garlic and chili flakes in oil on medium low and used as an aromatic oil/topping. 

    Oh and also I tried making noodles myself. It went… It went. 

    All in all, not perfect by any means but I’m still really happy with how this turned out!
