
Reverse sear starts in a convection toaster oven at 250 until it gets to 105. Rest for a few mins while I open every window, crack the garage open a few inches, close every bedroom and bathroom door, turn on every ceiling fan, and get the pan screaming hot. Sear for 30 secs each side including edges with an 8lb steak weight pressing down on it. Remove the ribeye cap and sear that exposed fat. Eat that. Oh yeah then take this pic.

Was 105 degrees a guess?
105 is barely warmed and would be blue rare. 30 seconds per side wouldn’t even budge the color. You cooked it to almost 130 degrees before you pulled it.
