
Made this bulgogi ciabatta sandwich at home for my middle schooler’s lunch today.
Thin-sliced bulgogi, sautéed onions and mushrooms, with a few jalapeño slices for a little kick.
Trying to keep school lunches simple, packable, and not embarrassing for middle school kids is harder than I expected 😅
This one was quick to make and actually got a thumbs-up, so I’m calling it a win.
What do your middle schoolers usually bring for lunch?

As per your question, if he’s an active kid then rich and cheesy pasta dishes are a good bet, or a rice bowl type of thing.
Anything like my kid and they’d complain that it’s not a Lumchable.
Damn when I was in MS no way I would’ve eaten that I was a picky kid however no one knew, outside of Korea, what bulgogi was back then! Looks fantastic!

Just fyi, my son’s (Indian) friend brings elaborate dishes for lunch. He trades them all off to other kids for PB&J, Cheetos, Oreos, etc.

Lotta jalapeños. I like em but that is a lot. It does look very good though. I think I would toss a little cheese on mine.
