How to Make Classic Meatloaf

Serves: 6 to 8

Ingredients:
3 tablespoons olive oil
3 cloves of garlic, minced
1 small onion, finely chopped
2 stalks of celery, finely chopped
1 medium carrot, peeled and finely chopped
1 red bell pepper, finely chopped
1/2 cup thinly sliced white mushrooms
Salt and pepper, to taste
1 pinch red pepper flakes
2 teaspoons dried parsley
2 lbs. Omaha Steaks Ground Ultra-Premium Ground Beef, thawed
2 large eggs, whisked
1 cup panko bread crumbs
Ketchup, to finish

Directions:
1. Preheat the oven to 350 degrees Fahrenheit.
2. To a skillet over medium heat add oil, garlic, onion, celery, carrot, red pepper, mushrooms, salt, pepper, red pepper flakes, and parsley. Cook until vegetables soften, about 8 to 10 minutes. Set aside to cool.
3. In a large mixing bowl add ground beef, eggs, bread crumbs, and cooled veggies. Season generously with salt and pepper. Mix until mixture is well blended.
4. Transfer to a foil-lined baking sheet and shape into a loaf. Brush with ketchup, ensuring every side is covered.
5. Bake for 50 to 60 minutes, until cooked throughout. Let stand for 5 minutes before slicing. Serve with Omaha Steaks roasted garlic mashed potatoes!
