This is an amazing sensation but I would say butter over bacon grease.

Coffee smells nice. So does baking bread. But I made French onion soup a couple days ago with almost four pounds of onions and that smelled pretty great.

Garlic butter onion. That’s the winner.

Rendered beef fat is a perfectly acceptable substitute for the bacon grease. You can put whole cloves of garlic in whenever you like, and get that aroma added without them burning like minced garlic would. Then later they mash up easily.

Where’s the pope? Needs garlic.
(And chillis, IMHO)

Maybe it’s just me but swapping the bacon grease with butter and adding garlic would elevate it further.

To me, the absolute best is butter then right when the onions go into the butter and they start cooking. Chefs kiss.
