So, when I moved into my house, I replaced some of the “natural prairie landscaping” with chives and garlic/Chinese chives. The latter has spread like crazy, and the whole front of my house, and now some of my lawn, is garlic chives.
I started making buchu kimchee. I can cut away enough to make several quarts and you wouldn’t even notice that chives were harvested.
In any case, pretty much the #1 use for them is I started adding some, in addition to the traditional kimchee, to my kimchee jjigae. I highly recommend it, if you can make or obtain buchu kimchee.
