This Loaded Potato & Meatloaf Casserole is pure comfort food at its best. Juicy, seasoned meatloaf topped with creamy loaded mashed potatoes, cheese, and bacon — all baked together into one incredible casserole. Meatloaf Layer
* 2 lbs ground beef
* 1 cup milk
* 1 cup seasoned breadcrumbs (Italian & Herb)
* 2 large eggs
* 1 small onion, finely diced
* 3 cloves garlic, minced
* 2 tsp salt
* 1½ tsp black pepper
* 2 tsp garlic powder
* 2 tsp onion powder
* 2 tsp paprika
* CWT All-Purpose Chicken Seasoning
* 2 tsp beef bouillon
* 1 tsp Italian seasoning
* ½ cup ketchup
* 2 tbsp Worcestershire sauce

Loaded Potato Layer
* 3 lbs yellow or russet potatoes, peeled and cubed
* Salt for boiling
* 4 tbsp butter
* 1/4 cup parmesan cheese
* 1 cup heavy cream (or milk)
* ½ cup sour cream
* Salt & pepper to taste
* cooked bacon, crumbled

Toppings
* 1½ cups shredded cheddar or Colby Jack
* 6 slices cooked bacon, crumbled
* Green onions or parsley, or chives (optional)

Homemade Brown Gravy
Ingredients
* 3 tbsp butter
* 3 tbsp all purpose flour
* 2 1/2 cups beef broth
* 1 tbsp Worcestershire
* 1/2 tsp onion powder
* 1/2 tsp garlic powder
* 1/2 tsp black pepper
* salt to taste
* 1/2 tsp Kitchen Bouquet or browning sauce

    I mix everything together except the beef. When everything is well combined, then I fold in the beef. I love meatloaf and mashed potatoes. Never thought about making them together in a casserole. Looks delicious

    I'm totally down for this but I'm worried about the grease. Meatloafs give off tons of it and I'm worried it's going to ruin the dish. Can you parbake the meatloaf first, then add the potatoes?

    It's a bit like a Mashed Potatoes and Meatloaf version of a cottage pie. Sounds tasty. I kept wondering how this would work with a bit of a cajun flavor. One of my favorite fast food mashed potatoes is from Popeye's and they have a cajun gravy with little meaty bits in it. Not sure how to describe it so that it sounds good, but maybe a little cajun seasoning and some sausage of some kind to give it a little bit of a kick. I know that some people will put some sausage in with the beef for a meatloaf.
    I'm fairly new to your channel, so I don't know if you made something like that already, but everything I have seen you make so far looks incredible.
