El Capricho Mussels in Escabeche

These were some of the biggest tinned mussels I have ever had. A wonderful texture of slightly chewy and also some soft, almost pate like combinations.
The sauce delivering a typical acidic punch that escabeche is known for.
By frothing it (emulsifying), suddenly the texture was velvet, giving it a lighter, more "saucy" feel.
Can't take credit for the milk frother idea, that is all RTG, a long while back. Brilliant 👌

Overall, very clean flavors and amazing quality. As it should be for the price you pay, at $24 for a tin of mussels, the expectation of excellence was met.
