[homemade] Picanha, reverse seared at 195 C, finished in cast iron with peanut oil, butter and rosemary. Rested for 14 mins and remaining juices from the pan added.
Served with: Blanched and then shocked Brussel sprouts, which were then deep fried and finished with a balsamic reduction. New potatoes, blanched then roasted in olive oil, salt and rosemary.
