Put the pasta maker I got for Christmas to use last weekend and started with some simple Mushroom & Tarragon. Made a quick creamy pan sauce to serve along with some oyster mushrooms
Great dip back into pasta making but the dough could have had more integrity. Does anyone have a good egg-free pasta dough recipe to share?

Those look delicious!
Try adding in some silken tofu to the dough mix the protein in it really helps the dough bind.
Recipe for eggless pasta
200 gram flour 1/2 pack of silk tofu about 125g a glug of olive oil and a small pinch of black salt / kala namak to mimic the egg flavour. splash of water as required.
