I think I’d probably cook the onion a little longer before adding the egg. Otherwise this looks tasty..

These seem yummy but I’d need to cook them differently, maybe steam the onions on medium first to soften then reduce to medium-low when adding the eggs. I hate the taste and smell of browned eggs 😰
