Jackie asks for this homemade Roasted Red Pepper Sauce all the time.

It’s seriously the freshest tasting pasta sauce around and super easy to put together.

Plus if you want to sneak in extra veggies for your kids, here you go.

Add whatever protein you’d like for this one and it’s a whole meal. Steak, Chicken and Shrimp would all go really well.

Ingredients:
10 roma tomatoes, quartered
2 red peppers, roughly chopped
1 yellow onion, roughly chopped
2 heads of garlic
Olive oil
Salt
Pepper
3/4 cup fresh basil

Instructions:
1. Preheat oven to 450F.
2. Prep all veggies and spread out on a baking sheet lined with parchment paper. Cover with generous amounts of olive oil, salt and pepper.
3. For the garlic, cut the top of the head in the skin and put in tin foil. Add olive oil, salt and pepper and wrap the foil. Place on the baking sheet.
4. Bake for 30-40 minutes.
5. Broil for another 5 minutes.
6. Add roasted veggies to a blender plus basil to a blender. Blend until combined.
7. Add to pasta of choice. Serve and enjoy!
