I made a ton of corn syrup for at home matcha so i wanted to make a corn dessert with some of it – then came about the idea for a corn cake. I made a corn sponge, soaked with the corn syrup and coconut mascarpone and corn pastry cream for the filling, coated with the coconut mascarpone and piped on corn Swiss meringue btcrm kernels. The leaves are white chocolate with green food coloring. I will post the cross section tomorrow as I’ve run out of daylight and want to get better pictures! πŸ™‚
