I made so many mistakes 😂.

I'm pretty sure I left the dough out too long at room temperature before/after cold BF. I also left it to prove too long in the oven (switched off with the light on) – which turned out to be way too warm.

I didn't flour the basket enough (it got stuck) and I forgot to lower the temp of the oven when I took the lid off the dutch oven.

The dough was so soft going in the dutch oven and it didn't really hold its shape! The crust is also a bit soft/uneven.

But…it smells and tastes great, which is the main thing!

This is basically the Bread Ahead recipe but with mistakes ha.

500g strong white BF
150g starter
350g water
10g salt

Mix flour and water. Wait 1 hour, add salt. Leave in fridge 24 hours or so.
4 x folds, leave for another hour (this is when I left it for too long in the oven with light on).
Add to basket, leave for another 1 hour at room temp.
Leave in fridge for 16 hours.
Rest at room temp for another hour, then bake!
