👨‍🍳 Copycat Rao’s Roasted Garlic Sauce
Makes: about 680 to 700 g (1 jar)
Prep Time: 10 minutes
Roast Time: 40 to 45 minutes
Simmer Time: 25 to 35 minutes
Total Time: about 1 hour 15 minutes

🥣 Ingredients

Aromatics
• Whole garlic bulbs 2
• Yellow onion, finely diced 150 g (about 1 cup)
• Olive oil 60 g (about 1/4 cup), divided

Tomato base
• Crushed tomatoes 800 g (about 28 oz)
• Tomato paste 30 g (about 2 tbsp)

Seasoning
• Kosher salt 6 g (about 1 tsp)
• Sugar 4 g (about 1 tsp)
• Dried oregano 1 g (about 1 tsp)
• Black pepper 0.5 g (about 1/4 tsp)
• Red pepper flakes 0.2 g (tiny pinch), optional

Finish
• Extra virgin olive oil 15 g (about 1 tbsp)

🥄 Instructions

Roast the garlic
Heat oven to 400°F. Slice tops off both garlic bulbs.
Drizzle with 10 g olive oil, wrap tightly in foil, and roast 40 to 45 minutes until soft and golden.
Cool slightly, squeeze out the cloves, and mash into a paste.

Build the base
Heat remaining olive oil in a saucepan over medium low.
Add onion and a pinch of salt. Cook 8 to 10 minutes until very soft and lightly golden. No browning.
Stir in tomato paste and cook 1 minute.

Add tomatoes and garlic
Add crushed tomatoes and roasted garlic paste. Stir until the garlic fully dissolves.
Bring to a gentle simmer.

Season and simmer
Add salt, sugar, oregano, pepper, and optional red pepper flakes.
Simmer uncovered 25 to 35 minutes, stirring occasionally, until glossy and slightly thickened.

Blend for signature smoothness
Use an immersion blender and blend until smooth but still has body.

Finish
Stir in extra virgin olive oil. Taste and adjust salt or sugar if needed.

💡 Pro Tip: The “Rao’s” vibe is gentle. Low heat, no browning, and fully dissolved roasted garlic paste. If you brown the onion or crank the heat, it starts tasting like a different sauce.

Some douche bag who eats lobster and caviar with 7-digit income would complain about the product they make; his comment was stupid and was his out-of-touch/ignorant opinion that was supposed to be personal… their products aren't horrible tasting and has long shelf life for those who don't have easy shopping and have to buy in bulk w/ longevity. Raos is an expensive brand which a copycat is appreciated; i never bought personally because a 7$+ when a off brand or sale is 1$. It's a base which i season which eliminates a hour simmering and sits in the pantry for years. The only brand which i never had to season because it was perfect was Emeril"s oh garlic, but was discontinued too quickly; I'm a garlic lover and it was so fresh garlic flavored it burned… perfect!

  9. I'd love if you did the Rao 4 Cheese pasta sauce, I absolutely despise tomatoes and everything made with them and the cheese sauce is what I use for my homemade pizzas.

  10. I grant that making sauce like this is pretty straightforward and uncomplicated. However, not everyone has 90+ minutes to spare preparing a serving or two of sauce or the equipment/experience needed to make a large batch of sauce and canning it. When chiding not to pay "jar prices" you need to take into account how much your own time is worth. Once you've factored in the cost of the raw materials and the time needed to prepare… is it really that much cheaper??

  11. The convenience of a jar is still there. I wonder if it's safe to home can roasted garlic? If yes, a person could fairly easily make their own back stock. You can use canned tomatoes for that ( the #10 big cans are pretty cheap)
