Cooking about 3.5 pounds of jerky today. The egg has held at a nice 120-130° for the last few hours.

    It’s also probably cold in your climate, which helps keep low temp. In sunny 100°F this would be impossible for sure, or darn near.

    I usually cook my jerky at 250 for about one and a half to two hours. I drape it over my second rack exactly like that. It works so well.
