    Hit you with some bonus pork steaklings. Just got a pack like this myself. Sear em hotter and faster than. The chops and you’ve got a treat. If i’m wrong I dont care because it worked for me just fine

    Its the best part of the loin, im a Chef and used to work in a big Restaurant in Berlin where i made over 100 Schnitzel a day, i pounded them to order and that part is my favorite

    It’s the end cuts mixed with center cuts.

    Rib meat- think ribeye but pork.
    The other are loin or striploin but pork.

    I prefer the darker ones. Flavor/tenderness is delightful.

    Pork chops are such a disappointment. First they aren’t even the same cut of meat and second, they are so lean, they are usually dry, unless you really know how to cook

  11. Shoulder or neck(collar) – better quality meat

    They accidentally grew some flavor into those ones. Dispose of immediately, lest you have better moisture/flavor.

    Butcher here. The top two are from the rib end of the boneless loin, sometimes called pork ribeye or country style chops. The bottom ones are center-cut. Most people think the rib end is inferior, but I think it is actually superior.

    They’re the good ones. I always peek at the packs at my market to see if they have one with only those.

    Those are boneless rib chops. The ribeye of pork. These are the best imo

    Just different cuts. Still both pork chops. The lower ones will dry out faster
