

Not the prettiest but yummy and easy. I like to prep a mix of veggies / beans that are good both cooked and cold so i always have something to mix into salads and cook with. My mix this week is broccoli, tomato, white beans, green onions and mushrooms. I added some to a couple chopped persian cucumbers and added some rough chopped shrimp (i buy frozen cooked shrimp, thaw it under water, and remove the tails for quick cold protein). Instead of a dressing I mixed in miso paste and rice wine vinegar. I’m working on opening a restaurant and have to taste some food today that will be fried and have sauces / other components that are high in fat so I wanted to curb my hunger going in without consuming too much fat since I know i’m gonna get a decent dose later today 🙂
