200g starter

750g water

22g salt

1000g water

Mix. Wait 1 hour.

4 rounds stretch + fold every 1/2 hour. Wait 1 hour.

Dump onto counter, letting dough release itself. Cut in half for double batch.

Shape, cover on counter, wait 30 minutes.

Shape again. Put in bowl, rest 5 minutes, then put in fridge overnight.

In the morning I put the bowl on the stove while the oven preheated to 450. Put the dutch oven in the oven to heat up for an hour before putting the dough in along with a few ice cubes.

Left the lid on for 20 minutes, then took the lid off and lowered temp to 400 for another 15 minutes or so (I forgot to set a timer for the second part of it so I just kept an eye on it).

I was so worried I was going to take the lid off and it was going to be a flat disc, or I was going to cut into it and it would be completely hallow. I'm so happy it came out nicely!

    I think you meant flour instead of water for the 1000g. 🫠
