1 yellow onion, finely chopped
2 large carrots, peeled and chopped
1 stalk celery, chopped
4 garlic cloves, minced
1 tablespoon tomato paste
1 teaspoon salt, plus more to taste
1 teaspoon Italian seasoning
½ teaspoon black pepper
Pinch of red pepper flakes (optional)
1 quart vegetable or chicken broth
2 cans white beans, drained and rinsed
2 cups chopped kale, stems removed and finely chopped

1. Heat about 1 tablespoon of olive oil in a large pot over medium heat. Once hot, add in the chopped onion, carrots, celery, and garlic. Sauté until the veggies are soft and fragrant.
2. Add in the tomato paste, salt, Italian seasoning, black pepper, and red pepper flakes if using then continue to sauté for about 1 minute.
3. Pour in the vegetable or chicken broth and add in the white beans, then bring the soup to a simmer, cover and leave to simmer for about 10 minutes.
4. After 10 minutes, transfer 2 cups of the soup to a blender and blend until smooth, then add the pureed soup back into the pot with the rest of the soup. Add in the chopped kale and stir until the kale has wilted.
5. Give your soup a taste and adjust any seasoning as desired, then serve warm or store in jars for an easy meal prep lunch!
