I love octopus more than most so I’d enjoy it but I wouldn’t really call this a dish. It’s just octopus and an unknown jelly or something?

Looks nice but in the future I would be mindful of garnishing with woody herbs like thyme. Thyme leaves, sure but this particular variety of thyme has a very woody and fibrous stalk.

Being a long time exec chef, the octopus looks ok but the raw thyme sprigs are inedible and inedible garnish is considered tacky and pointless

Looks amazing. I stopped eating octopus after reading “remarkably bright creatures”, but have deep appreciation for the dish. Used to be one of my favs and I’d have gobbled this down assuming the chew matches the looks.

Pretty, but you have ignored the person who has to negotiate this plate. It’s very small, and I can imagine a tentacle flying off into the air while the diner struggles to cut a bite sized piece.
