
Hi! I’m looking for some dairy-free recipe suggestions. I picked up a can of 505 mild green chile but most recipes I see involve cheese. I have some dairy free cheese, but I’d rather just skip it. The grocery store also has some fresh Anaheim peppers this week if that would be better to cook with. I can get tomatillos etc at the local Hispanic grocery store. The Hatch canned mild red chile sauce was a bit too much for me when I had it a few years ago. I believe I had Christmas stacked blue corn enchiladas, and green chile quiche (at the airport!) when I was in NM a few years ago.
