Love on a Plate: Roasted Beet & Citrus Valentine Salad

A naturally pink, fresh, and elegant salad made for Valentine’s Day 💗
Roasted beets paired with juicy oranges, creamy feta, crunchy walnuts, and a sweet honey-orange vinaigrette — simple, beautiful, and full of love.

Ingredients

Roasted Beets
• 2 small beets
• 1 tbsp olive oil
• Salt & black pepper

Salad
• arugula 3 oz
• 2 oranges, sliced
• ½ cup feta cheese, crumbled
• ¼ cup toasted or raw walnuts
• 2 tbsp fresh parsley, chopped

Honey-Orange Vinaigrette
• 3 tbsp fresh orange juice
• 1 tbsp honey
• 1 tbsp apple cider vinegar
• 2 tbsp olive oil
• Salt & black pepper

Instructions
1. Roast beets:
Preheat oven to 400°F (200°C). Toss beets with olive oil, salt, and pepper. Wrap in foil and roast 45–55 minutes until tender. Cool, peel, and cut into wedges.
2. Make dressing:
Whisk orange juice, honey, vinegar, olive oil, salt, and pepper.
3. Assemble:
Place arugula then arrange beets and orange segments on a plate. Drizzle with dressing.
4. Finish:
Top with feta, walnuts, and parsley. Serve.
