Been obsessed with sweet flavoured sourdough recently, but came across ‘Jalapeno and cheddar’ combination and thought I needed to try this. And I love it! It’s probably my new favourite now. The cheese I used all melted in the oven and gave me fake open crumb haha

And I reduced salt a little bit thinking to mix some parmesan ground in during the lamination folding, and I completely forgot about it 😂. Surprised that the bread tasted alright. Thanks to the cheddar I guess?

Ingredient

Bread flour 160

Plain flour 30

Water 136

Starter 72

Salt 2

Inclusions

Chopped cheddar block 20g

Pickled Jalapeno 18g

Process

Autolyse 1 hr – mix in starter – rest 15 min – add salt – rest 40 min – S&F – rest 40 min – coil fold – rest 40 min – lamination (add inclusions) – rest 60 min – pre shape – rest 20 min – shape – cold fermentation 15 hrs – bake in a dutch oven (lid on) at 250 C for 20 min – bake in the dutch oven (lid off) at 230 for 10 min – open bake at 220 for 10-15 min

    You whispered the words cheddar and jalapeño to the outside of the loaf before baking but forgot to put it in.
