In honor of the college football national championship tonight, I made what I’m calling a “Hoosiercane”, which blends the Cuban from Miami with Indiana’s fried pork loin sandwich.

I marinated some pork chops in a homemade mojo sauce for 24 hours, then fried them using a blend of saltine crackers, cumin, paprika, Mexican oregano, lime pepper, and salt. Once they were out of the skillet and fried, I splashed them with another hit of mojo sauce. Two of those chops were then topped with two slices of Swiss, some grilled Black Forest ham, two more slices of Swiss, some spicy bread and butter pickles, and a smattering of homemade hot honey mustard all grilled between a buttered bolillo roll. Crunchy, tangy, sweet, spicy, meaty perfection.
