2 1/2 Lbs. Boneless skinless chicken thighs
1 1/2 C. Chopped Onions
3 Small Celery ribs (chopped)
2 C. Med diced Carrots
2 Lrg Garlic Cloves (finely minced)
2 Tbsp Olive Oil
1/2 C. All Purpose Flour
4 Tbsp butter
6 C. Water or more if needed
2 Tbsp Better than boullion chicken base
1 1/4 C. Frozen Peas (optional)
2 Bay leaves
1/2 tsp dried Thyme
1/2 tsp crushed Rosemary
Pepper as needed
Salt as needed

Dumplings:
1 C. All purpose flour
1/2 tsp rubbed Sage
1/2 tsp Salt
1 3/4 tsp Baking powder
Pinch pepper (optional)
1/2 C & 1 Tbsp Whole Milk

  2. I use a combination of thighs and beasts, I'm not a fan of dark meat, but I do like the extra flavor a couple of thighs add.
