Croissant dough and puff pastry dough is fundamentally different. This is 100% a croissant roll and not puff pastry. I baked French pastry for 15 years. The shape hasn’t been what’s defined it for a long time. The roll op posted is the same kind of dough that you posted.

….This looks awesome and delicious, and I want one very badly. But it looks more like a cinnabon than a croissant.
Maybe it’s just me, but it feels like a gimmick to use croissant dough in something like this. The appeal (to me) of a croissant is to be light and flaky with a metric ton of layers. When you crush them together like this, and made all soft and squishy, they’re really just like any regular dough. But maybe that’s just my unrefined palate speaking.
Still looks good though.
