An aubergine parmagiana inspired lasagne with half the amount of pasta and roasted aubergine slices instead! Ingredients:

  • 4 lasagne sheets
  • Tinned tomatoes
  • 800g mushrooms
  • 1 courgette / zucchini
  • 1 onion
  • 1tbsp tomato paste
  • Garlic and herbs as desired
  • 100g grated mozzarella on top

I usually divide into 4 portions, theyre huge!!
