


An aubergine parmagiana inspired lasagne with half the amount of pasta and roasted aubergine slices instead! Ingredients:
- 4 lasagne sheets
- Tinned tomatoes
- 800g mushrooms
- 1 courgette / zucchini
- 1 onion
- 1tbsp tomato paste
- Garlic and herbs as desired
- 100g grated mozzarella on top
I usually divide into 4 portions, theyre huge!!
