

If anyone also uses the great value pesto, the recipe has changed. It was 60 calories for a 1/4 of a cup and is now 170 for a 1/4 of a cup. It was a regula purchase for me, so I didn't check. The packaging is still the same. Does anyone know a brand with a lower calories?

19 grams of fat is 171 kcal so the math was not mathing on the 60 kcal label. If I see correctly the new version has 16 grams of fat so you might actually consume less calories now 🙂
Im trying to figure out how they almost tripled the calories and lowered the nutritional value. What garbage did they put in there that did that?

It was actually never 60 calories–that was a misprint! I know people wrote to Walmart to have them fix it (I was one of them). Look at the label on the 60cal one–19g fat. If one gram of fat is 9 calories, that’s 171 calories in fat alone. Adding 3 for carbs (4 minus one fiber) and 3 for protein at 4 calories per gram each, you’ve got another 24 calories. So the old jar was actually 195 calories per serving.
Looks like the new one has less fat and protein than the old one, so this one is actually nutritionally lighter.

Pesto made with sunflower oil is an abomination unto Italian god. Olive oil makes up so much of the flavor!!!
If you have a food processor and want pesto that’s actually 60 cal per serving, I recommend this recipe. In fact, I totally skip the pine nuts because they’re expensive and lemon because I’m lazy and it’s still decent. I freeze individual portions to use whenever.

Ingredients
2 cup basil leaves, packed
6 tbsp water
4 tbsp Parmesan cheese, grated
1/4 cup pine nuts
1 tbsp olive oil
3 cloves garlic
2 tbsp lemon juice
1/4 tsp salt
1/4 tsp black pepper
Directions
1 Add everything to a food processor or blender and blend until smooth.
2 Store in an airtight container for up to two weeks or freeze.
