Tonight’s dinner: my mom’s split pea soup. A mix between a recipe from her home country (the Netherlands), erwtensoep and a soup my French grandma use to make. The hardest part was finding smoked sausage where I live. The recipe is in the comments.

    Brown the smoked sausage (here 4 medium sausages) with three onions and two carrots. Once everything is nicely golden, add a little water, a vegetable stock cube and a bouquet garni. Then add one bowl of split peas, rinsed under cold water beforehand, followed by another bowl of water. Let it cook uncovered for about 30 minutes, adding water regularly. Add some freshly ground pepper. When there’s just a bit of liquid left, cover and let it simmer over low heat for one hour. Enjoy! 😋

    Erwtensoep or snert as it is called in my region is delicious on any cold day. Looks very good!

    Split peas have like 25g protein per cup dry so this is way more filling than it looks. Good one to double batch and freeze for lazy lunch days.
