Now, one year after their debut, Betty Crocker is dropping two new Soft Baked cookie flavors that bring a pop of color and comfort when we need it most.
Betty Crocker’s New Strawberry Mist and Lemon Crinkle Soft Baked Cookie Mixes

If the post-holiday slump has you feeling tired, unmotivated, or lethargic, you’re not alone. Without the promise of peppermint bark, gingerbread cookies, Yule logs, and other festive desserts, January can feel especially long. But thanks to Betty Crocker, it might not feel that way for long. The brand is launching two new, limited-edition Soft Baked Cookie Mix flavors, Strawberry Mist and Lemon Crinkle.
Strawberry Mist is inspired by strawberry cake, blending fruity, floral notes with just the right amount of sweetness. Lemon Crinkle, on the other hand, reimagines the classic cookie in a slightly larger form, so you can enjoy brighter, more citrusy flavor in every bite. Both mixes yield vibrant pink and yellow cookies that add a welcome splash of color to an otherwise gray season.
Like the rest of Betty Crocker’s Soft Baked line, baking a batch of cookies at home couldn’t be easier. Simply add eggs, butter, and water to each mix, then pop them in the oven for 15 to 17 minutes. Each package has enough dough to make about 25 cookies, and even includes frosting and heart-shaped sprinkles, a direct nod to—yep—Valentine’s Day.
And, heart-shaped sprinkles aren’t the only V-Day treat Betty Crocker has in store for us. The brand is also bringing back the Strawberry Cake Mix from its popular SuperMoist line. Tender, fluffy, and sweet, the SuperMoist Strawberry Cake Mix has long been a fan favorite, beloved for its fruit-forward flavor and melt-in-your-mouth crumb. Fans consistently call it “the best strawberry cake I’ve ever had.”
“I love, love, love these,” wrote one reviewer on Walmart’s website. “They actually smell like strawberries when you’re cooking them [and] all you have to do is add the frosting. They are [of] very great quality for the price, and the taste is amazing. Very soft.”
All three products are rolling out to major grocers nationwide now, so keep your eyes peeled. If winter continues to be as gray as the last seven days, we’re all going to need a few extra packs of pink and yellow cookie dough to hold us over to spring.
